choc chip cookies (american style)

last time i made choc chip cookies i said next time i’d make more ‘american style’ ones – soft and chewy (like Ma Higgins), so here we are as promised.  here’s the recipe i used, from the joy of baking – beat 225g butter (unsalted pref), softened or at room temp, until pale and creamy, add 3/4 cup sugar and 3/4 cup brown sugar, tightly packed and beat for about 2 minutes until light and fluffy.  then add 2 eggs, beating after each, and 1.5 tsp vanilla, beating until combined.  finally mix in 2.25 cups plain flour, 1 tsp baking soda, 1/2 tsp salt and 1.5 cups choc chips into a dough, and pop balls of dough (approx 2 tbsp in size) onto a greased tray, with enough space for them to grow (i did 6 per tray).  bake at 190C for around 10 mins, until slightly brown around the edges.  i like to take them out a wee bit early so they’re soft and doughy in the centre. yum x
