belgium biscuits

inspired by gran’s christmas baking, today i made some belgium biscuits – spicy biscuits made with cinnamon, ginger and mixed spice, sandwiched together with raspberry jam and topped with white icing and raspberry jelly.  i used the classics edmonds recipe (but next time i’m going to ask gran for her’s) – it’s very easy and i think you should have a go.  beat 125g butter with 1/4 cup brown sugar, add one egg and beat some more.  mix in 2 cups of plain flour and 1 tsp each of baking powder, cinnamon, ginger and mixed spice to form a firm dough.  roll to approx 3mm thick and cut out rounds.  bake for approx 15 min at 180C until golden.  once cool sandwich together with a dollop of raspberry jam, then top with a glaze (made of icing sugar and water) and sprinkle with granules of raspberry jam.  classic x
