kiwi pav cupcakes

in celebration of ABs v France tonight i’ve made some kiwi pav cupcakes – basic vanilla cupcakes, topped with vanilla buttercream with a hint of kiwifruit and mini pavs.  to make the mini pavlovas, i whisked (with an electric beater) 2 egg whites to soft peaks then whisked in 1/2 cup caster sugar slowly.  spoon onto a tray lined with baking paper and bake at 120C for approx 30 min or until they start colouring.  to make the kiwifruit buttercream i followed a basic vanilla recipe and added approx 2 cap fulls of kiwifruit juice in substitution of some of the milk.  pipe a wee bit of buttercream, pop the pav on and top with more buttercream x
