macarons with dark chocolate ganache

today i braved macarons.  i say braved because macarons are notoriously hard to get right; many myths surround them – use old eggs, don’t make them when its raining, etc…  i made the macaron shells by following this great basic recipe.  this is the french meringue style (in contrast to the italian meringue style, which uses hot sugar syrup and involves a candy thermometer, yikes).  i used a few drops of red food colouring to give them a light pink tint, and sandwiched them together with dark chocolate sour cream ganache (melted dark choc + sour cream (but google for more complex recipes if you’re less lazy than me!)).  so i didn’t use old eggs and it has been raining today, but i still managed to make my first successful macarons, phew! x
