monarch butterfly cupcakes

today i made some monarch butterfly cupcakes (this week is D.O.C conservation week so it seemed appropriate).

here’s how:

  • for the jaffa cupcakes – cream 125g softened butter and 1/2 cup caster sugar. add two eggs one by one, beating after each. then add 1 tbsp orange rind, a quick squeeze of half an orange and 1 tsp vanilla extract. sift and fold in 1 cup plain flour, 2 tsp baking powder and 2 tbsp cocoa powder. stir in 1/4 cup milk to finish. fill your pattie pans, then bake for approx 20 min at 190c. you should get about 12 from a batch.
  • for the orange frosting – cream 125g softened butter, 400g icing sugar and 1 tsp of vanilla extract. then mix in 1/4 cup milk and add orange food colouring slowly until you get a nice bright orange. don’t be shy with whipping the frosting up until it’s good and fluffy (you can’t really over-beat frosting, unlike cupcakes)
  • for the monarch butterflies – make a mini chocolate piping bag (my instructions are on this page) and pipe a dark chocolate wing outline onto a sheet of baking paper (see pics below), as simple or intricate as you like. fill in the gaps with white chocolate tinted orange – to do this melt the white chocolate (i used nestle melts), then quickly add the food colouring drop by drop until you get the right colour, but be careful not to add too much at once or the chocolate might seize. if you can’t find orange food colouring (like me) use yellow and red. wait for the wings to dry, then position two dry wings onto a freshly piped dark chocolate body for each butterfly.

cool cupcakes, pipe your orange frosting however you fancy and top with your wee monarch butterflies. done! x
