mint cookies and cream cupcakes

i used my basic chocolate cupcake recipe, with a few delcious adaptions, to make mint cookies and cream cupcakes.

  • for the choc-mint cupcakes, cream 125g butter, 1 tsp peppermint essence and 1/2 cup caster sugar. add two eggs one by one, beating after each. sift and fold in 1 cup plain flour, 2 tsp baking powder and 2 tbsp cocoa powder. stir in 1/4 cup milk to finish. pop 1/2 an oreo (the icing side up) in the bottom of each pattie pan, fill then bake for approx 20 min at 190c.
  • for the mint cookies and cream frosting beat together approx 1 cup butter, 5 cups icing sugar and 1 tsp peppermint essence for approx 3 minutes, then added the other halves of the oreos (ground up), and 1/2 cup milk, followed by approx 3 more cups of icing sugar to thicken.

cool cupcakes, pipe and enjoy x
